Humans and Grass?

Why can't humans get nutrients from grass? I hear that only cows could. why?

Well, we do bring back nutrients from grass - including phytochemicals and some other components, but we can't derive much caloric (energy) nutrition from grass, as the first poster pointed out, because we can't digest celluose. Celluose is a polysaccharide (long chain of glucose molecules). Its sugar monomers are connected by beta1,4 glycosidic linkage. A special enzyme would be needed to cleave this bond and digest the polysaccharide. We, as humans, don't have this enzyme whereas cows do. We can, however, digest starches (sugars found contained by other plants) with their alpha1,4 and alpha1,6 linkage. Sugars are stored in our own body as glycogen (another polysaccharide) beside alpha1,4 and alpha1,6 linkages.
